Cock a leekie Soup 1


Scotland has what is referred to as “The Auld Alliance” – very strong connections with France.  France was often where our Royalty in exile holed up when waiting to return to power – if you think about periods in our history with characters like “Bonny Prince Charlie” and “Mary Queen of Scots” (Actually her son was the first King to unite Scotland and England).

So a lot of our “traditional” recipes are strongly influenced by the French court and travelling chefs.

This soup was apparently a favourite of Mary Queen of Scots when imprisoned here at Lochleven Castle – apparently she escaped by dressing as a washer woman in a wee boat:

Yes – that is a teeny castle in the middle of a Loch – its now a nature reserve and you can walk all the way around the loch on a good day. Its a favourite walk / cycle of the boys on a Sunny Sunday.

Bet she needed a bowl of this by the time she had made her escape in the driving rain and sleet though.

COCK-A-LEEKIE SOUP – per person

  • 2 portions chicken stock
  • 100 ml water
  • 2 tbsp cooked rice
  • 2 tbsp cooked shredded chicken
  • 1/2 leek, cleaned and finely shredded
  • Salt and pepper to taste

 

Heat the stock and water until piping hot – add the rice and chicken and cook for a couple of minutes until hot through.

Toss in the finely shredded leeks and cook for a minute or two until cooked but still fresh and green looking.

Adjust seasoning and serve very hot.
