We have got visitors this weekend – so baking today is a quick something savoury, something quintessentially Scottish and something that will be a welcome addition to our Sunday brunch when they get back from their walk on this misty November morning.
Good old stick to your ribs “tattie scones” with grilled tomatoes, homemade baked beans and crispy smoked bacon from Puddledub Farm (and no! that’s no a made up name)
- 450g of leftover mashed potatoes
- 100g SR Flour
- 1/2 tsp salt
- Plenty of freshly ground pepper
- 50g soft butter
Warm up the mashed potato in a bowl in the microwave. Season well and add the butter and the flour and mix until well incorporated.
Turn ont a lighlty floured surface and roll out gently to a 1/2″ thick circle.
Cut the circle into 8 wedges.
Cook on a hot greased griddle (or heavy frying pan) for 4 – 5 minutes until very hot.
Now that’s what I call a breakfast.
