Some days .. and they usually are Mondays … just leave you with your head in your hands and a headache from hell. BUSY – so busy in the office …….. and I am definitely suffering today from the “why is the winter so long and how come it still gets dark so early?” … sure it must have a name, every other syndrome does!!
On nights like tonight dinner is going to have to be quick – or chips from the chipshop are calling my name because I have a massive case of CBA’d.
Something on toast maybe? Beans in tomato sauce from a tin (nope), Cheese … shouldn’t really, poached egg? tomato? Sheesh!! Its just one more decision to make.
Still – I have some wholegrain sourdough left that would make excellent toast .. so have a rummage in the cupboard and I found some inspiration.
Mustard Mushrooms with beans on sourdough!! Now – THAT sounds posh enough that I can claim I didn’t just have a “something on toast” for tea doesn’t it? The beans should keep me good and full and I have half a pack of mushrooms that need using before they go all wilty/slimy on me.
Mustard Mushrooms and beans on toast
- Two slices bread
- Big handful of mushrooms
- 3″ piece of leek
- 1 garlic clove
- Juice of half a lemon
- Small tin of white beans (about a cup)
- 1 tablespoon mild grainy mustard
- A sprig of Rosemary to “poshify”
Sliced mushrooms and chopped rosemary in with a splash of water.
Mushrooms are cooked and beginning to colour a little.
Sprinkle over a little more rosemary cos .. well its a fancy thing that foodie’s do innit? Sit down at your table and INHALE!!! There … that will make everything better.
And cooked in one pot so there is precious little washing up to do as well !!
