These are a staple for packed lunches in our house – easy to throw together and they freeze really well, defrosting naturally just in time for lunch, and being full of apple and oats they keep little tummies full till teatime
There always seems to be a bag of these in the freezer – but today, well today there was just an empty bag!!! Time to get the pinny and get busy.
After all tomorrow the kids are back to school and we have a much smoother morning routine if “packed lunch” foods are cooked and frozen in advance.
APPLE AND OAT MUFFINS
- 125g plain flour
- 75g porridge oats
- 25g pumpkin seeds
- 3 tsp baking powder
- 75g sugar
- 1/2 tsp salt
- 1/2 tsp mixed spice
- 1/2 tsp ground cinnamon
- 1 egg
- 1 grated eating apple
- 150ml vegetable oil
- 175 ml milk
Measure out all the dry ingredients and place in a large bowl.
Grate your apple -just core and grate it all up. The apple cooks down into a soft sweetness and the skin adds more healthy non-soluble fibre but the kids really don’t notice it.
Beat the egg in a bowl with the milk and measure out the oil. Pour the wet ingredients into the dry and mix until barely combined – you don’t want to over-mix muffins or they cook tough – you want the mixture to still be a bit lumpy.
Get your cases prepared – this mixture will do 12 muffin cases – but if your kids are smaller you can make 18 cup-cake sized ones instead. My big boy can manage a whole large one as a mid-afternoon snack, and the littlie usually ends up sharing one with me after playgroup.
Fill your cases 3/4 full of the muffin mixture – I use a 1/4 cup measure to make them all the same.
Bake the muffins at 180 for 25 minutes until the tops are lovely and golden – they won’t puff up like the shop bought “mushroom shaped” ones as they are fairly dense with the oats, but the flip side is that they are robust enough to survive the lunch box without disintegrating.
Take them from the oven and allow to cool slightly before standing on a wire tray to cool completely. You can then freeze them quite happily and pop a frozen muffin into the school lunchbox where it will defrost by lunchtime.
