Warm Moroccan Salad – just what the Doctor ordered after a couple of weeks of rich food and too much alcohol. I don’t know about you .. but getting older for me means that there are days when I get up and crave fresh veggies instead of fresh cream cake … guess I am growing up.
Doesn’t mean that I am ready to give up on taste .. and at least by cooking for myself I can hit the flavour notes I am searching for and even though the dish might not be a “proper” recipe it usually hits the spot.
I was looking for big flavours – warming spices, earthy veggies, sharp dressing spiked with shards of chilli and some soothing green herbs. Why warm? Bah! Left cooking dinner too late to leave the veggies to cool that’s why? Busy Mum remember!! Still there are plenty of leftovers that will be nice and cool for tomorrows lunch.
Warm Moroccan Salad
- 1 carrot
- Half a courgette
- 2″ piece of aubergine
- 1 red onion
- Half a green pepper
- 3 squishy tomatoes
- Handful of cooked chick peas
- Steamed Kale
- Juice of half a lemon
- 1 teaspoon of Lebanese spice paste
Veggies and some cooked chickpeas cooling in tubs before finding their way into the fridge. 2016 is apparently the “Year of the Pulse” .. so stand by for more recipe including beans, peas and lentils. Well they are dead cheap to cook with and are healthy for you too – so what is not to like?
Just noticed that my teeny jar of “Moroccan paste” is actually “Lebanese” .. actually many of the same flavour notes of cumin, coriander, cinnamon, chilli and garlic. A small teaspoon of paste mixed with the juice of half a lemon makes a decent amount of dressing to use on my warm Moroccan salad.
So a couple of handfuls of kale wilted in some boiling water and drained mixed with a large scoop of veggies and a small handful of chickpeas tossed in the aromatic dressing ………… fancied up with some rings of red chilli and a sprinkle of fresh coriander. TADA!! Warm Moroccan Salad!!
And dinner is served ….. very nice it was too – even if I did get my countries confused!!!
If I was serving this for the boys I would probably add some Pitta Bread and Baba Ganoush to make it a bigger meal – but for tonight .. PERFECTION!!
