So no pressure then – 70 odd comments from yesterday and still climbing … what on earth have I got that could keep you all interested? Here is hoping that I still remember how to upload photos and stuff – so bear with me if this doesn’t go so well.
Well here is one that I have been playing with for a little while. A zippy salad dressing that you can make a jar of at the weekend and will sit quite happily in the fridge ready to be drizzled over anything you fancy through the week.
I have a teeny little screw-top jar that I pop a couple of tablespoons of dressing into and throw in my bag so that I can dress a lunchtime salad bowl without the extra calories of added oil. I prefer adding the dressing at lunchtime so that the salad doesn’t go all wilty and slimy – but this has enough flavour that it makes a heap of veggies pretty satisfying as a meal.
I also use it to dress rice and pasta salads .. or dribbled over hot roasted veggies .. anywhere you fancy a flavorful punch without having to spend a fortune. I buy a packet of walnuts and store them in the freezer away from temptation BTW – I find that if they are in the cupboard I am too tempted to snack and that is not good for my budget or my belly!!!
Balsamic Walnut & Mustard Salad Dressing
- 4 tbsp walnuts
- 2 tbsp sultanas
- 4 tbsp balsamic vinegar
- 8 tbsp water
- 1 tsp mustard
- 1 garlic clove
- quarter teaspoon mixed herbs
Pop everything into a blender ………………..
Blend till smooth – about 30 seconds should do it.
Pour into a jar so that you can store in the fridge. It will thicken quite a bit as it sits so it goes lovely and gloopy enough to coat even a bowl of greens – minus the added oil.
So if your New Years resolution is to “eat more veggies” this could also be your secret weapon too! What do you think?
