Weekly prep is becoming to be the mantra around our house now – I KNOW 100% that on the weeks where I can hit Monday running with a fridge full of prepped food I am more likely to be able to stick to my menu plan and therefore more able to stick to our food budget.
It doesn’t always mean that I fancy doing lots weekly prep – but I am getting better at making myself do it anyway. Sometimes I even kid myself that I must be growing up a little to just do it .. but then reality kicks in and I admit then my teen can be more responsible than I am most of the time!!!
So …. I made some mince. I know it doesn’t look very appealing but this is a favourite of the teen. A slab of this frozen mix topped with mash potatoes and his favourite Shepherds pie becomes a weekday possibility.
I always promise myself that I will make a salad for lunch – but on a chilly morning I am more likely to stick pins in my eyes than to start washing salad greens in our just above freezing tap water.
I get around this by washing, spinning in a salad spinner and storing my greens in a big plastic box with a couple of sheets of kitchen roll in the base to catch any drips.
It means I can pop the lid and chop away without doing the chilly finger thing.
This is how I deal with the “bits n bobs” of veggies that need using up this week. All washed, shaken dry and stored in little takeaway containers that I can stack in the fridge.
All this weekly prep is doubly perfect for packing a salad lunch – chop some greens and throw some prepped veg on top. No excuse not to take lunch with me and be “forced” to buy when at work. When I have to buy lunch its because I have failed to plan and I am making it my mission to be better at planning ahead in 2017.
So – I have some cooked red cabbage, mangetout, Bulgar wheat. Next are sliced radish, sugar-snap peas, shredded white cabbage then on the bottom row sliced celery, Puy lentils and raw red cabbage. Eating a rainbow for lunch is easier when all the cleaning and chopping is done in advance.
All my boxes stack up in an acrylic container that I can just pull from the fridge every morning.
At the very top I have … perfectly cooked brown rice, gazpacho soup, Beefless Stew … all quick options for a meal in a hurry when there are other things going on. Perfect for busy evenings where you need to turn everyone around really fast.
And everything stacks nicely back into the fridge ready to be used up …. the only thing I think I want to make in addition is some No Cheese Cheez Sauce to go with a massive cauliflower I scored at the supermarket this week.
As for the time involved – well about an hour .. but I know it saves my sanity to prep like this, not to mention my budget.
