Braised Red Cabbage – in a pressure cooker. Why didn’t I think of this sooner?
Cabbage is so cheap in the shops right now that I am always on the hunt for more ways to serve it up. Although I love finely shredded red cabbage on a salad a little goes a long way meaning I often have a half left sitting in my fridge.
So – Bonfire Night tonight .. where one chunk of the country celebrate Guy Fawkes being caught in the Gunpowder Plot … and the other chunk celebrates that he tried (sorry guys if you are not from these “Sceptered Isles” you may not get that joke!!
Bonfires mean sausages and although we are not out at a firework display this evening I thought it would be nice to treat the boys .. OK .. totally nothing to do with the fact that LIDL had nice sausages on offer this week. Nothing, no, nothing at all to do with that
Sausages, braised red cabbage and roasties it is then .. Sunday Dinner … kind of!
- Half a red cabbage (about 500g)
- 1 red eating apple
- 1 onion
- 1 clove of garlic
- 5 cloves
- 1 cinnamon stick
- 3 tbsp red wine vinegar
- 1 tbsp brown sugar
- 0.5 cup of water Finely chop the onion – and core and chop the red apple.
Slice and then chop the red cabbage – you are not making coleslaw here so nice little chunks instead of shreds are perfect. Bung everything into the pressure cooker – lid on and up to pressure. Just five minutes should see it done to a turn. Piping hot .. and Oh My!! Its like a waft of Autumn with the warming spices of cloves and cinnamon. The whole kitchen suddenly is filled with wafts of cosy aromatics .. and boys hovering around finding our when dinner is going to be dished up!!So – quick boys dinner – Reduced Price sausages, heaps of braised red cabbage and some roasted new potatoes.
Autumn on a plate ….. warming, cheap and tasty … which leaves plenty of time this evening for Games Night .. Cluedo this evening .. with fireworks cracking outside.
