Broccoli and Red Lentil Soup – a real “rummage around the bottom of the fridge to find out what to make for dinner” dish.
Mind you -turns out it’s really pretty when made. Delicate pale green, speckled with dark green and ruby red flecks …. and it tastes lovely to boot. Even lovelier that I didn’t have to go shopping for anything as I am making a conscious effort to run down our fridge and freezer before the holiday.
- Half a head of broccoli – use the stem as well
- 1 medium onion
- 1 cm piece of ginger
- 1 whole red chilli
- 2 cloves of garlic
- 1 cup red lentils
- Crushed seeds from five cardamon pods
- 0.5 tsp tumeric
- 0.5 tsp cumin
Chop all you veggies – you can leave the tender florets a little larger but chop the broccoli stem quite small as it can take quite a bit of cooking to get soft.Everything into the pot and cover with boiling water.
Bring your pressure cooker up to pressure and set your timer for ten minutes. After ten minutes at pressure remove from the heat (if it doesn’t cut the heat as my electric one does) .. and leave for another ten minutes for the soup to continue cooking and the pressure to release. Remove the lid and give a brisk stir with a wooden spoon if you like your soup chunky
..or a quick blitz with a hand held blender to make a super smooth and silky version.
….. and the bonus of four additional portions ready to stash in the freezer for a quick lunch one day soon.
