Smoky-Spicy Tomato Lentil Soup – not the most glamorous of suppers but packs a serious punch with flavour. Even better at only eight minutes in the pressure cooker it’s out of the kitchen and onto the table in a flash .. which left us plenty of time to set about decorating the house for the festivities to come.
The kids came off on Christmas Holiday today (and so did I) – so something quick, cheap, easy and tasty is just the ticket .. nothing too fancy as the days of feasting are yet to come. A quick furtle about in the depths of the fridge and …. supper is served!
I feel like I have been running non-stop since the beginning of the month and am so looking forward to some down time – some simple food and simpler, less stressful days.
This is winter comfort right in a suppertime bowl.
- 1 stick of celery
- 1 medium onion
- 2 cloves of garlic
- 1cm piece of ginger
- 2 small sweet postatoes
- 1 cup red lentils
- 1 carton of passata
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 0.5 teaspoon cayenne pepper
- 1.5 litres water
Chop your veggies into small dice – this a hearty chunky soup so nice to leave the texture in there … although … can we talk celery?? The wee red head hates it .. so I chop it as finely as the onion and he is really none the wiser. Everything into the pressure cooker .. add the extra water and pop on the lid.Just 8 minutes on the time and then let the pressure come down naturally – about ten minutes or so just leaving enough time to set the table and send the boys to put on pajamas so that I can put the school uniform on to wash. Trust me I won’t miss the shirts during the Christmas break!!!TADA!!! Smoky-Spicy Tomato Lentil Soup -chunky loveliness .. and gently smoked with a punch of chill heat. Real stick to ribs stuff for dinner. The wee red head is getting more adventurous with his flavours these days and loves when we cook with smoked paprika. If you are not a fan of chilli heat though then you may want to dial back on the cayenne as its quite fierce. Three huge bowls for our supper and a scoop leftover for a lucky someone for lunch tomorrow….. and clean up after such a simple supper was very easy …. unlike the days to come I fear.

We may not get time to tell you a the end of every term in the melee but we really do appreciate the work you do with our kids every year in the run up to Christmas.
