Butternut squash and lentil salad …. not quite what I was planning for dinner .. not that I really had a plan for dinner .. more a “I should eat something healthy (after all of yesterdays birthday cakes at MFin3 HQ) and it should be on the table in the same time it takes me to pull the Spaghetti al Sugo and garlic bread that the kids were after onto the table.
So basically one of those “stand at the fridge door and pray for inspiration” kind of dinners!
Thankfully there are plenty of veggies in my fridge … and even better there are plenty of staples in my store cupboard. So ……………………………………..lentils say “healthy” don’t they??
So really this is less a recipe – more a method .. but now that spring is attempting to appear I hope that these hefty “stick to your ribs” salads wil be making more of an appearance in the weekly rotation.
- 1/3 cup little Puy lentils – something that wont go soggy when you cook
- A 1″ slice of butternut squash
- A big handful of broccoli
- 1 red onion
- 1 tomato
- Juice of half a lemon
- Small handful of parsley
- Two mushrooms
Slice the red onion into little moon shapes, shred the parsley and chop the tomato .. toss in a bowl with the juice of a lemon and a good grinding of black pepper.
Pop the lentils into a pan with plenty of boiling water and cook until tender but not mushy.
Boil the broccoli until just tender – not too cooked cos you are going to finish it off in the oven. Yes – I know that is a big pot of boiling water for a mere handful of green stuff .. but as soon as I scooped out the veggies I threw in the pasta for the boys .. no sense wasting the fuel bringing water to the boil and then pouring it down the sink.
Fill your dinner bowl to the brim with as many raw greens as you can smoosh in there! Tonight is romaine lettuce, baby gem and rocket ……
Slice the mushroom and dry fry in a hot pan until they are frazzled and cooked.
Drain the lentils and run under a cold tap to cool – toss everything into your bowl and give a quick stir.
Then lift all the veggies onto your bed of greens … and sit down smugly thinking “at least I escaped the temptation of the garlic bread!!!”
Actually by the time I had munched my way through this bowlful there is no way I could have found an empty wee corner for garlic bread anyway.
So .. what is on your meal planners for this week …. cos I am really seeking inspiration.
