The busier I am getting at work – the simpler I am needing my food prep to be. I find that even though I am working from home I am relying on my slow cooker / pressure cooker / freezer combos more and more. Soup ticks my boxes – its my fall back as you all know,
The thing is – women have ALWAYS worked … and somehow we always managed to feed our kids. All around the world there are women going out to work this morning and they will come home, do homework, do housework, feed and clean kids before falling into bed.
So I started to think .. what an adventure to stand in solidarity with these women by eating our way around the world trying a frugal recipe from each of the countries … which morphed this morning during my walk into .. one recipe from a country going through the alphabet A-Z.
Which by the time I was already faffing about the shopping that would need to be done and the unusual ingredients that would need to be sourced – merged and simplified into a goal to cook a vegetarian bean recipe from every country instead.
Beans are cheap – they are a staple of so many country’s cuisines .. why not experiment with these simple cheap dishes and see of we can find some new favourites? Beside I have loads of beans in stock that need eating up and I’d rather spend any money I have at the moment on the kids or growing my side businesses than on fancy food shopping.
I mean – how simple does that look? I bet that most of us could go lay our hands on most of these ingredients right now if we “shopped from home”. Sure if you don’t have dried beans – then you could throw in a well rinsed tin … but in this recipe its the long slow cooking that does the trick so I am going “old-school”
So .. last night .. I popped 225g (half a packet) of white beans into a bowl with plenty of water to let them soak.
INGREDIENTS – 3 bowls
- 225g soaked white beans
- 1 small onion – finely chopped
- One teaspoon hot paprika
- Half a carton of passatta
- 500 ml water
- Salt and pepper to season – after its all cooked.
Then this morning I pulled out my slow cooker and chopped my onion and tossed everything in …..
….. with the water of course .. and set it on low for about 5 hours.
And left it to itself whilst I wrangled the daily emails -pleas for help – requests for writing tasks and phone calls and got my bag packed for heading off for a board meeting in London on Wednesday.
Of course .. can’t share with you the utterly gorgeous smell wafting about the house all this afternoon as dinner pretty much sat and took care of itself ….
Gorgeously tender white beans in a slightly spicy soup base – thickened by the starch out of the slow cooking beans. Totally mellow and yummy.
Three decent sized bowls – one for me and the big one (wee one at his Grans tonight) and a bowl to fill a flask to take with me tomorrow on the train to London. I betcha any money it tastes utterly brilliant on the second day!!!
Beats an overpriced sarnie on the train doesn’t it?
So .. there is my “A” for Albanian Fasule Soup … white bean and tomato soup ….. can’t get cheaper than that can you?
