Tomato Bulgur pilaf .. because occasionally you want to feed your kids something other than chips! And the fact that you have a bulgur wheat mountain in your dry goods store that is just slowly outstripping the couscous mountain.
So – yeah! always looking for new things to do with the bulgur wheat … and pilaf sounds posh!!!
INGREDIENTS – serves 4
- Half an onion – chopped
- One sweet pepper – chopped
- 2 fat garlic cloves – finely chopped
- 400 g tin of chopped tomatoes
- 200 g bulgur wheat
- 175 ml water
- 1 tsp ground cumin
- 0.25 tsp ground cinnamon
- 0.25 tsp chilli flakes
- Salt and pepper to taste.
So chop your veggies – constantly amazed at how many tasty suppers starts with the chopping of an onion and a couple of cloves of garlic.
I don’t use any oil to saute my veggies any more .. just a splash or two of water in a decent pan and you can soften the veggies just fine without the added calories.
Toss the veggies in and stir occasionally until ……
…….the onion is softened and has lost its raw taste. Stir in the dried spices and make sure the veggies get all coated and toasty.
In with the chopped tomatoes …….
…. the wheat ………
…stir .. stir … stir ……
… then the water ……………
Lid on – bring to a simmer and then turn down to the lowest heat you can for 15 minutes. Remove from the heat and leave to steam for a about five minuets before fluffing up with a fork ready to serve,
The boys had some Reduced to Clear sausages .. I had a pretty hard-boiled egg instead .. with some steamed green beans .. cos you need some greens don’t you?
Enough for dinner tonight – and a small box tucked away to serve up as a cold salad tomorrow now that the big kid is at home on study leave rather than off at school with a packed lunch. Gotta keep him eating right so that he can get great grades .. so he can get a great job .. so that I can have a decent retirement .. and I am only kidding just a little bit LOL.
